Pumpkin Donut

It is tradition in Portugal to eat the pumpkin donuts in the Christmas period.


1,5 kg – of pumpkin;
3 eggs;
3 – Orange shavings;
100 g – of sugar;
10 g – baking chemical yeast;
600 g – wheat flour;
200 ml of orange juice;
50 ml of hot water;
Salt and cinnamon to taste

Method of preparation:

Cut the pumpkin into pieces, unsheat and bring to the boil with water and salt. Then drain in a sieve and set aside. Dissolve the yeast in the orange juice and set aside. In a bowl, put the pumpkin, zest and orange juice with yeast, brandy, eggs, a pinch of salt, sugar and flour, then beat everything in the mixer. Let the dough rest for 2 hours. To fry make cookies and fry in hot oil. To drink, use sugar and cinnamon.
