Method of preparation:
Cut the eggplant into slices and separate. Break an egg and separate into a bowl, in another bowl separate the breadcrumbs. Pass the eggplant in the egg and then drizzle in the flour until it is all covered with flour. In a frying pan with very hot oil go adding the eggplant slices. When one side is fried turn the other side and let fry until golden. (Salt to taste)
